      Been doing allright...I think! Left AZ for Cali, ditched Cali (YAY!!!) for Utah. Looking for work so I can get the family over here and replace my Jeep!

              This time, just some Old Bay Blackened seasoning and pan fried them. I'll usually 'blacken' them myself in a hot iron pan, or do a cornmeal crust and deep or pan fry...all depends on time and how I feel. Louisiana Fish Fry mix works really good for frying, or batter them up, spray with some oil and back on a foil-lined tray. Easy cleanup and less work! I haven't grilled any yet outside of wrapping the fillets in foil with butter, lemon and onion.
